Shredded Beef Loaded Potato

For this weeks Dinner on the Dot we chose a not-so-well-known beef cut known as osso bucco. This roast is technically a shank but can be cooked just like any other roast. It features a cross section of a marrow bone adding to that perfect rich beefy flavor. Don't have the osso bucco cut? No problem. This recipe can be adapted using any beef roast.
