Prepare to indulge in a culinary fiesta with our tantalizing Elote Steak Tacos! These tacos are a celebration of bold Mexican flavors, featuring succulent steak infused with spices, grilled elote (Mexican street corn), creamy sauce, and vibrant toppings. Ingredients

1 Steak of your choosing. Seasoned with salt, pepper and garlic powder

corn or flour tortillas

1 red roasted bell pepper

1 roasted jalapeno

2 tsp of garlic powder

1 tsp of smoked paprika

1 tsp of onion powder

1 tsp cumin

salt and pepper to taste

2 ears of corn, husked or 1 can of corn
- 2 tablespoons mayonnaise
- 1 tablespoon sour cream

1 tablespoon lemon juice
- 1/4 cup cotija cheese, crumbled
- 1 tablespoon fresh cilantro, chopped
- Chili powder for sprinkling

Additional cotija cheese, ¼ red onion finely chopped and a sprinkle of cilantro for topping
- Lime wedges for serving
Directions
Grill the Corn: Preheat your grill to medium-high heat. Place the husked corn directly on the grill grates and cook, turning occasionally, until charred in spots and tender, about 8-10 minutes. Remove from the grill and let cool slightly. If your cooking canned corn just use a pan and toasted until golden with a little butter.
Prepare the Corn: In a small bowl, mix together mayonnaise, sour cream, and lime juice to create the sauce. Sprinkle with crumbled cotija cheese, chopped cilantro and the seasonings.
Grill the Steak: Heat your pan or grill to a medium temperature and cook your steak until desired doneness.
Assemble the Tacos: Warm the tortillas on the grill or in a skillet until soft and pliable. Fill each tortilla with slices of grilled steak and your corn mixture. Sprinkle with additional cotija cheese and cilantro. Add red onions if desired and garnish with lime wedges.
